I mixed all my homebrew by hand and didn't have any problems. I imagine that doing it in a mixer will be a nightmare to clean up afterwards as it is so sticky. You should find that its consistency changes (it keeps getting stickier!) over 15 to 20 minutes which I think is due to the clay hydrating fully.
Dunking the bricks before laying definitely helps - you don't want them dripping wet when laid but they do need plenty of water in them. I put all my bricks in a bucket of water, took them out and stacked them up ready for use, before actually laying any of them.
