I think that if the pizza is a simple neapolitana, it warrants a good mozzarella, still with the proviso it's for a small number of people. Hardly anyone wants this (that I cook for anyway), and want various toppings, which is fine by me, but cheaper cheese for sure. You can't beat a nice mozzarella with some tomatoes, rocket, olives and a drizzle of olive oil with some garlic or some other variation.

I have tried Mozzarella from virtually every high street shop and at the end of the day, you get what you pay for! you can't beat a Mozzarella Di Bufala Campana and Costco do a very good one at a reasonable price. Taste the difference!

V&C is a great shop to go to, it's 5 mins away from my work - but you're not wrong with having to take some extra folding stuff. Easily the best Deli in Edinburgh, you pay for what you get though.

Stevo, not sure if I should be envious or sorry for you there. 1. You lucky besom, having V & C on your doorstep. 2. I would be considerably poorer if I worked 5 mins away, would be in there all the time, couldn't resist! You don't happen to know if they vacuum pack stuff do you? I'll be in Edinburgh in November for a few days. Just wondering about the possibility of bringing some mozzarella back with me, and of course, some other goodies. I'm not even sure if it would be ok being vacuum packed. I must look into that. I did finally get some down south side of the island a couple of weeks ago. I had been looking before but never found any, simple reason was that I was looking for balls, not the block stuff. (I didn't know that it came in block form, that must be what they use to do those grated packets). Anyway, got some, and when I got home found out that it was German! It was fine, but couldn't serve it up in a salad. Will have to see if I can find somewhere else here that I can get some decent stuff. My quest has been in vain so far.

I would agree with comments above if just a simple pizza then a good quality is required but mostly I am cooking for lots of friends and/or with toppings I use the cheap Aldi Mozz. At 44p a bag which usually does 2 pizzas its a bargain and I get lots of compliments!

I used some of this on the weekend: www.tesco.com/groceries/Product/Details/?id=255087569Tesco Pizza Mozzarella Not too bad at all, and already pretty dry which is nice. It's 'proper' mozzarella, not the pre-grated stuff but it looks (and is packaged) a bit like halloumi.

First post, thanks for the great advice here.
So far one my favourites is a garlic mushroom, ham and Camembert (in addition to mozzarella). Melts really nice and give a good flavour.

I am going to give making my own a try,, I make lab neh and then ricotta from the whey . Will have to photograph the prototype!

i've just looked up the recipe, you're right it does look fairly simple. i wonder if it freezes well, could make a big batch and freeze for future use that would be handy. all the recipes call for full fat milk, do you think i could go one further and make it with milk straight out the tank from my friends dairy farm, ie straight from the cow! this should just add to the flavour and creaminess of the cheese wouldn't it?

Serious Pizzerias in Italy only ever use cows milk Mozzarella - not Buffalo.
