Am on operation empty freezer and I pulled out two bags of duck bits , duck breast and two bags of game . So I am hot smoking the duck legs and keeping the fat to make game pie tomorrow. I won't ne smoking the game as I want the different tastes between the smoked duck and the game. Also the fat will have a smoky ring to it as well. And coincidently like Marcus I am using cherry wood. And just because I have a piece of salmon and belly pork ( for a risotto) in the cold smoker.q
