 Still working on my beef rubs with chocolate and coffee, this one worked great with chipotle added and then rubbed onto a couple of ox cheeks before smoking. Full Recipe Here Cheers Marcus

That sounds great. I hadn't thought about smoking ox cheeks - normally braise them in beer for several hours. A good place to get chipotles (and all other mexican spices, foods etc..) is www.mexgrocer.co.ukI bought a kilo of dried chipotles from them a year or so ago and just rehydrate them as necessary for recipes or grind them for powder. It's the gift that keep on giving!

Thank you! I was struggling to find them (should have mentioned - whole  ) as I make chipotles in adobo (sauce) which is great as a sauce to add to thinks, but absolutely stunning when mixed with miracle whip for sandwiches... As a comparison, walk into any subway sandwhich chain, and ask for their chipotle sauce - that's what it ends up tasting like. M>
