I've decided that the next experiment will be 400 g white, 400 g six seed, and 200 g wessex cobber ... when I've done it I will report.

That sounds really good RG. Must try it with a biga, I've been playing with pre-ferments and fridge retarding lately, makes weeknight baking very flexible.

Wessex Cobber Bread Flour 1.5kg Awarded 2 stars in the Great Taste Awards. Judges commnent "This made a perfect loaf, with the most unusual enjoyable taste. Wheat pieces are just chewy and plentiful enough "
A Delicatley flavoured malted bread flour made using soft malt pieces that are kind to your teeth. Granary is a malted wheat bread flour, the trade name belongs to Rank Hovis Ltd. Our malted wheat flour is called Wessex Cobber.
Ingredients- Wheat Flour, Malted Wheat Flakes, Malt Flour.

matt am also having fun with the experiments ( although yesterdays fougasse over proved in the heat !!! ) HB thanks for that ! I love a malty flour which is why i have taken to putting malt extract in my mix .

I've been playing with flour from Bacheldre Mill – bizarrely their website points you straight at Amazon where you can buy it with free delivery on the super saver option. Bacheldre flour on amazon The flavour is fantastic, it really is exceptional flour.
