I had similar issues trying to dry out a render (actually waterproof tile cement) coat and generally working on the oven. I bought a 2x2m gazebo from eBay for £62, works a treat and I'll pass it on when I've finally got the oven waterproof. Fairly crap picture, on phone, at night, whilst under the influence; but you get the idea. It's secured to the oven using 4 bungee straps and hasn't moved very far even during the winter storms.

Some pictures of My first major pizza oven party. By using a mixture of oak, pine and birch the oven worked better than I've ever seen it. Reaching temperatures of over 550c in about an hour and a half. I came out the next day to see what the temperatures were reading and the hearth and its walls were still reading about 100c .it just shows the layers of insulation really are worth it. I now have big plans to put a proper roof and walls on the pergola to make it a real mans gave :-).

Love the last pics of everybody just lounging around after the pizza party.....drinking a glass of whatever....watching the flickering flames of the Wood-Fired oven .....and generally "chewing the fat"....I can relate to this after hosting and attending many pizza party's....if you can keep a couple of flames in the oven.....people just don't want to move away from that location.
Great set-up of the pergola/seating area.....I commend you on the setting of your WFO.
The only wood you didn't mention was "Ash"...Kiln dried or even seasoned Ash (or even green....as Ash has the lowest natural water content of any hardwood) will give the best heat for your shilling.....even if the initial cost is a little more.

Have you changed the flue?
What type of chimney have you used? My build was the same as yours with a 5" hole cut in the front of the dome, i mounted a single wall flue into the hole and continued as you have with the vermicultite and then final render coat, where the last coat of render touched the flue pipe, due to the heat it has cracked the render. How did you get around this problem, how did you fix the flue pipe.
