This recipe has been kindly passed on from Meena. Although a self confessed carnivore, I love interesting vegetarian recipe's and tried Leena's recipe......no microwave so fried off the mushrooms and didn't have mixed herbs so substituted with Herbs de Province....it turned out perfect.
Red and yellow peppers Courgettes red onions mushrooms mozzarella Basil garlic mixed herbs OO, salt and pepper bechamel sauce passata lasagna sheets
Cut up red and yellow pepper, courgettes, red onion and mushrooms so they are chunky.
Microwave the mushrooms in a lidded container.
Roast all other veg with a little olive oil, salt, black pepper and I also added some dried mixed herbs.
Once veg is three quarters cooked place in a large pan and add passata, basil and some garlic. Heat through.
Make a bechamel sauce.
Layer the lasagne the usual way with a sheet of lasage at top, some bechamel and mozarella.
