Time for a rather belated update. Chimney sorted - the twinwall pipe just dropped into the chimney pot. Job done!

And now - all renedered and finished. First proper pizza night went well - followed up with a couple of loaves of sourdough and a chicken for Sunday dinner. Much to learn about managing the fire, and I need a different solution for the door. Any suggstions? I bolted together a sandwich of steel, thermalite and oak and it is as much as I can do to lift the thing. I didn't realise how often I would need to move the door. THought perhaps a slab of vermiculite board bonded to an oak facia. Thanks to all for help and all the great advice in the posts - couldn't have done it without you.

I use a piece of 25mm vermiculite board stuck with silicone into a mild steel frame; worked well for two years, although it has cracked.
