Bit more work done today will do the front tomorrow:) not sure how high I should take the bricks tho before putting a flue on The oven will draw better and have less smoke out the front at startup if you taper the flue gallery like an upside down funnel to meet the flue pipe. It doesn't matter how tall it is although you don't want too much weight up there, also more thermal mass outside the oven proper acts as a heat sink drawing more heat away from the oven.

Does this have to be done stright away or could I set bricks at a 45 from where I am now? Either will do. It's just that if the smoke has somewhere to collect before entering the flue pipe, you get less escaping from out the front. it is well worth the effort to do this, after all the reason you have a flue is to remove the smoke.

Only need a double flue if it's penetrating a roof. Even then you can get away with only making it double from where it goes through the roof to the the top. The flue pipe should extend 2' past the.roof.

How much insulation do people normally use? I have 7.5meters of ceramic wool from kilnlinings it's the 128kg 1inch thick one. I have gone over the hole done once and have 2meter left should I just use this to do the top again or should I buy more?

Insulation is key, and once done is very difficult to re-do so your extra 7m won't go amiss. As per your previous post, use any extra on the top.
