Has anyone browned then put a lid on a chicken and cooked overnight. I know it works for brisket but don't know if it will dry out to much.oven about 65 @ 4-5 in the afternoon

As long as it's not too hot when you put it in, and leave a nice layer of carrots/onions/celery underneath it I think you'll be fine.

I like to put 1/2 cup of water and 1/2 cup of wine in the roasting pan and sit the bird on a rack so it's not sitting in the liquid. What's left in the pan when it's cooked hasn't burnt on and is ideal for making the gravy.
