Can a chimney be too big. I have picked up a chimney pot, that is 11" diameter, would this be ok. My internal door height will be ok, but it's the width I'm worried about. Internal oven width is 20" and the door will be 15" wide, so i can get a decent size oven dish in there. Will the door being that wide allow to much heat to escape.

Thanks Because the chimney is open at the front it draws from both the oven and the front at the same time. For this reason you can't really overflue the chimney. Regarding the door width you want it wide enough for good access, but the larger it is the greater the heat loss. My own oven is 21" internal diam and the door is just over 15" wide, it works fine. You could reduce the width which will improve heat loss, but working the oven will become more difficult. I think your plan is fine.
