Does the meter have any form of small hole? This can sometimes be a reset, that you have to poke with a pin of something. Other than that it could be a miss-matched probe/meter. I suppose that there is no accompanying paperwork?

This is the one I got www.ebay.co.uk/itm/250842638909?ssPageName=STRK(Scroll down to see a picture of the back). There is some sort of tiny capacitor looking thing between terminals 3 and 4. I tried taking it out but it didn't work (I'll give it another go if it rains today) The instructions don't help & there doesn't seem to be a reset button.

Is your meter marked with K because I know the same seller has similar looking J-type displays, maybe you were sent the wrong type. When I accidentally reversed the wires on my meter, the numbers just worked in reverse so when the temp went up, the number went down.... Red should go to neg(-) and yellow to pos(+).

Sorry to say but you may have a mis-matched meter for your probe, my man. I think the EGT at the end is "Exhaust Gas Temp" which if it is, i've got a sneaking suspicion is a slightly different type of Sensor, working in a different manner, at a high temp range than you'd need. Hence the dodgy readings.
Pop to Halford or try to find a friend who's got a Multimeter with a K-type Thermometer built in. You should be able to plug in your Probe to check. If it works, i.e. gives a reading closer to ambient, you'll have an idea that the meter is mis-matched.
I think the Ebay lot do a 12v meter suitable, but it only goes up to 400c. Is that high enough, you think? Or they may be able to extend the range of another product.
I've asked them if they can provide a suitable meter, but you may have to arrange the return of your Meter.
