I have bought some nice dry wood for my firepit and indoor fire and wondered if, when the time comes to cook using wood, should I be taking the bark off?

If the wood is properly seasoned the bark should be falling off. The bark will burn but it does produce more smoke and ash so generally better to remove it but don’t go to too much effort, it’s still fuel.
