have pizzas saturday evening,just checked the oven a hour ago and still at 68 deg c

As Dave has said, you need to 'learn' your oven and because most builds differ in some way there are no hard & fast rules for this process. Repeated use will show you the characteristics of what you've built and eventually the parameters will even out and you'll be able to predict what's happening and cook accordingly. Enjoy what you've built.
