Hello.
I built a wood fired oven in my garden a few years back, mainly to create the perfect pizza. I've always been a fan of a certain pizza chain (Peter Boizot, big up, RIP). This may be sacrilege to some but I do love a Pepperoni Pizza and for years I couldn't find a decent Pepperoni supplier in the UK.
For about the last 6/7 years there was only one search/post that I could find that mentioned UK Pepperoni and it talked abut Aoste from major UK supermarkets. A decent sausage but no longer available.
I've learnt a lot through my internet searches and if, like me, you want a really good Pepperoni I thought I'd start a post. Here's what I've learnt;
Pepperoni is unlikely to be found in Italy, it originates from the US (thank you US!!!). As such UK Italian deli's probably won't sell it.
The closest thing in Italian cuisine seems to be salami salsiccia piccante but I've bought this from several different places and it didn't satisfy my Pepperoni craving.
I would suggest trying local UK based Charcuteries. Many seem to make decent cured meats these days including Nduja and Pepperoni.
The best I have found is near me, Capreolus Fine Foods in Dorset. I thoroughly recommend their Pork and Venison Pepperoni (*****awesome) . Their Nduja works well on Pizza too, very little oil so no oily Pizza.
I'd love to hear from anyone who's sourced great Pizza ingredients in the UK. I always pay through the nose for San Marzano DOP tomatoes, is there a good UK grower that tins tomatoes?
After years of experimenting with different Mozzarellas I've settled on using the yellow grated stuff. Cheap and nasty looking but melts really well. I've found fresh Mozza creates "slabs" that slide off the pizza when you take a bite and it doesn't carry enough cheeseyness (is that a word?).
I'm still in pursuit of the "perfect pizza". To each their own but would welcome any comments.
