Calaf, you say that the wet dough is a bit of a handful, here's a tip ... the reason I started using my mixer to bring together the ingredients was because I was getting the dough all over the place. 5 minutes in the KitchenAid at the start, and half (well most ) of the work is done for you, you don't get the awkwardness of the wet dough. It also means that when the 'phone goes, you can answer it! If a mixer isn't available, then I guess a bowl and wooden spoon would do it.

Hi HB! Hope you will share the recipe you use. I hate doing things by hand if the mixer can do it for me.
I find the awkward bit is just spreading the dough in the tray. Letting it relax 5 mins before that part helps I find.
