Joseph Interesting recommends from Pat Manley on hearth construction. Alan Scott's views tend to differ slightly on the premise of dissipating the initial heat for bread baking by adding extra thermocrete under the oven to stop the loaves from burning on the bottom before the dough is cooked through. More on this can be read here.... www.mairsbakehouse.co.uk/index.php/oven/ If you are worried about having not enough space at the front of your slab to take an entrance arch you can always drill a few 16mm holes in the face of your slab and insert 16mm re-bar 4" in...and 4" sticking out, tie 10mm re-bar to the top of the 16mm bar then form a box shuttering a pour more concrete.....thus extending your slab....not sure of the maximum allowed using this method. Perhaps 6 or 8 inches? Terry
