Well every day's a school day! What looked like a great batch of curds failed miserably when it came to making mozzarella, I used a different method of melting the curds which involved adding water to curds rather than curds to water as before. But it didn't work the curds heated up but didn't cook/melt at all. Need to read more into this, will then try again. And again and again and again etc lol.
