The last one was dry rubbed this time I have dry rubbed and marinaded. Make slits in the pork and dry rub. I used my Cajun spice mix with mustard powder, brown sugar and salt. Rub in well and refrigerate over night. The bath!!! Grind 3 bays leaves 1 big handful parsley Teaspoon allspice and juniper Two teaspoons peppercorns Chillies ( up to you ) I used chipotle and normal. 1star anise Garlic Ginger Mustard Add to a bowl with liqiuid of your choice I used 1 glass cider 1 glass white wine Juice of 2 oranges, lemons and limes ( I chucked the rest around the pork with 2 chopped onions. Left it in its bath turned frequently overnight in the fridge. Set the BBQ to indirect cooking and made a tray to put under the pork. Later on I will put veggies in the tray to roast in the pork juices. Put the pork in for the start of it 13/14 hour slow cook Will baste it regularly with one of my BBQ sauces . I pick ed a fruity , gingery one sweetened with treacle and not sugar. Attachments:

Don't forget to use your own mix of spices and herbs, I try to think what I am going to do with the left overs.... This baby is for wraps and I have made an assortment of chilli beans, lentils etc so I want a nice fruity bit of meat.

Well after a nice long cook and been continually basted with a good garlicky, gingery treacly BBQ sauce ..... Voila...... I am trying to take tips from Marcus with my photographs ::)e Attachments:

Kipper quite often my photos are upside down. I can only post photos from the iPad and it all depended which way I held it. But for me these are the right way up???
