think i posted in the wrong section before....see below had first pizza last night in the new oven see www.flickr.com/photos/52951673@N04/oven at first go seemed great....got the dome to 200c in 15 mins and 400c in less than an hour...whited out and kepy a relly even heat I use the top down fire method which always works well with no smoke at startup ( residential area ) also to let you folks know - I couldnt wait for the caputo from nife is life so tried www.baldorfood.com/gran-mugnaio-pasta-00-flour which i got from carluccios for £2 a bag...it was awesome. Itried a new method of mix a 50% hydration and making a small batch of poolish the night before to add to the mix....the dough / balls were so smooth and easy to work with

What a fantastic oven set up and brilliant pizza. The set of photos are fantastic and really tell and show a story! I wish I had the building skills. Also the quality of the work is first class. Really looking forward to seeing your other cooking exploits in what is a great set up. Werll done!

I have moved your thread to the the Modular oven "builds" section...hope that's OK. All the oven builds shared with us on the forum are special to me, but I must say that your workmanship is first class and your oven is a good example of what can be achieved using a modular oven (who's is it btw).
Love the masonry work and radius walls etc......as a bricklayer I touch my forelocks to you Sir.
Like the touch on the insulation around the chimney.......never thought of doing it like that.
Hope I haven't put your thread in the wrong place (the clever Mods usually move the threads when needed.
