Hey all, A Turkish Cypriot work colleague has kindly informed me of a traditional pizza style dish from back home - Lahmacun (pronounced Lah-mah-joon). He has assured me that this blog is an incredible recipe which he makes regularly with friends and family. It looks amazing and I've told him this will be definitely one of the first pizzas I make in my new oven over the next couple of weeks.....just thought I would share!! We do a version of this, and it is very popular. In our version the beef topping is cooked the day before, and we top with baby salad leaf, chopped spring onion and chopped tomato, with a squeeze of fresh lemon. Our beef mixture has cumin, coriander, smoked paprika, cinnamon, ginger and sweet pepper to name but a few ingredients ! Their great cold, but never tried freezing them. I highly recommend you try them. Can also be done with minced lamb, but I do prefer the beef

• 2 tablespoons olive oil • 1 Large onion, finely chopped • 2 garlic cloves, crushed • 1 tablespoon ground coriander • 2 teaspoons ground cumin • 500g lean beef mince • 2 tablespoons tomato paste • 1 teaspoon cinnamon • 1 teaspoon crystallized ginger • 1 red pepper • 2 teaspoons smoked paprika • Carton of Passata • Chopped fresh tomatos • Chopped spring onion • Small leaf salad (lettuce / rocket / watercress) • Fresh Lemons • Feta or mozzarella balls
Finely dice red pepper, on a tray into an oven on a tray for 15-20 mins with a little olive oil until sweet. Finely dice onion into a large pans and cook to opaque with garlic. Add mince and slowly cook until browning, add coriander, cumin, cinnamon, ginger, paprika and tomato paste, stir constantly until well mixed and simmer gently. Add passata until the right consistency is achived
The right consistency is when the mix is smooth enough to be spread over the base about 3mm thick. Add cooked red pepper as mix cools.
Once cooled, cover and refrigerate until needed.
Take a pizza base, roll etc ready for topping.
Spread with mix over the base, crumble some feta or mozzarella over the base and put into a hot wfo until base is cooked and topping is bubbling!
Cover with chopped tomato, spring onion and salad leaves and a good squeeze of lemon juice. Enjoy !

I had something like this as "Pides" last week at the local Turkish Restaurant - but with Lamb rather than Beef - it was delicious - many thanks for posting the recipe Muddy - I will definitely try this one.

We have made it with both beef and lamb, just prefer the beef ourselves, so that's what we tend to make.
