looks nice matty. what flour do you use? did you have to refire the wfo or was there residual heat for the bake?

Hi Keith, as a relative newcomer to the WFO world I thought I would try out some budget pizza flour from JJ Foods wholesalers called 'Pizza Selecta', I wasn't expecting much but I've been pleasantly surprised as we have made some tremendous pizzas these last couple of months. 16kg bag for just over a fiver (collection). www.jjfoodservice.com/product.cfm/Selecta-Pizza-Flour-1x16kg/PIZ066I think in a few weeks I will try 'high end quality' and buy some Marriage's Bella Premium flour to compare and judge from there. With regards to this loaf, I cheated and put it in the domestic oven, will definitely try the WFO next time though! Cheers Matt

i use caputo blue and can recommend that for pizza. i've not baked much bread before but definitely will be experimenting this year with some loaves. cant wait for my first pizza party of the year!

Yeah, will also try the caputo blue as I've heard its as good as you can get. In addition to this loaf I made some focaccia (sorry no pictures), really nice crumb and flavour.
The only problem I'm having though......is it wrong that I've started to dream about making bread??!!!! Ha!
