I rolled shoulder of pork sliced pockets about every inch. Stuffing tin of drained peaches 2finely chopped onions cooked in butter 3ozs chopped nuts or pine nuts 1/2teasp herb of choice Fresh breadcrumbs Add alll the ingredients into the onions stirring well.
When cooled stuff each pocket.
I am cooking mine using the indirect method on the BBQ. For about 1-2 hours (85c-185f)on the thermometer
You can mess about with the stuffings roasted peppers,olives apples with a little basil and paprika Using rice, quinoa or cous cous instead of the bread. I have taken a photo but I will have to take advantage of Calaf again to see if he will post it got me.
