I love a good pork butt, cooked low’n'slow for a good 7 or 8 hours, I used some Smoking guns rub I was given by Steve Heyes a BBQ legend and founder/chief cook of the Royal Q Pit Crew, so I knew it was going to be good. I smoked a pork butt (bone in pork shoulder) for 6 hours at 240 deg F in cherry and maple smoke, which had been rubbed generously with the rub until it reached 180 deg F, I then wrapped the pork in foil and poured in a cup of apple juice and sealed, I put this back onto the smoker until it was 200 deg F. I rested it for half an hour, at this point it was so juicy and falling apart, I pulled it and dosed with some homemade vinegar sauce, popped it in a roll, with some homemade slaw, and a good dose of The Ribman Holy Fcuk “Christ on a bike chilli sauce, perfection served with an ice cold beer. That's bang on , I love pork slow cooked I spit roasted a baby pig once over 4 hours and I felt so sick after eating so so much , love it .

That looks meatalicious never understood how our US friends can call a shoulder a butt, but it sure tastes good. What is your choice of smoker, Do you use a dedicated vertical smoker? A little off topic, but do you like the Carling Zest? I think I prefer the old Cobra lime which was really flavoured bur I think that has gone the way of the dodo. Shame as these summer brews can really hit the spot.

Cheers guys Terry you'd be welcome any time mate Turkey, yes I've got a proq frontier, a great bit of kit, makes this kind of bbq easy I was a big fan of the cobra lime too, sad not to see it any more, I love the carling zest though, very light at 2.8% and at 6 quid for a case of 12 in tesco, great value Cheers all Marcus
