Hi There, brand new to all of this and have decided to open a shop with a woodburning oven. I am looking for help and advice on how to do it. The first question I need answering is: are there risks related to acid in the chimneys of wood burining ovens? I was advised this (perhaps conveniently) by a commercial equipment dealer.

hi there, the big issue is if there are smoke control orders in the area you plan to work as this will affect the oven you can have, and also chimney design for the oven in the building and the internal layout. They have to be mostly vertical so physical oven placement will be limited by this requirement.
I am not aware of acid in chimneys, but you would most likely be using a twin wall stainless steel flue so perhaps this is more to do with old fashioned fireplaces than modern flue systems?

Hello cpover Wood-burning ovens in a shop are not common place, but they are to be found up and down the UK. Turkey has covered the main points and I am also NOT aware of any acid in the chimneys. In a shop the ventilation of the oven will have to carried out by qualified fitters and documentation needed from them to satisfy local authority regs.
