Cooked this up with the lamb today. The legs and wings are in the oven in a leek and chicken pie, the breasts are for a nice smoky risotto for tomorrow, and the bones and skin are bubbling away on the log burner ready for a lentil soup. Spice rub 3 tbsp paprika 1 chilli 2teasp crushed garlic 4 teaspoon cumin 2 teaspoon salt Chopped rosemary Mix with red wine vinegar and olive oil Coat the chicken inside and out ( left overs I rubbed into a bit of belly pork ) Put onto my chicken roaster with onions, garlic and peppers in the well topped up with some light beer. Looking forward to doing this again and having wraps with a good strong aioli. Attachments:
