I had the misfortune to have some chemotherapy in 1999, and it was around Easter time so I took comfort in consuming an inordinate amount of hot cross buns and tea. I still can't get enough of fruity breads and I thought I'd share the following recipe - its an easy free-form loaf.
500g strong white 275g warm water 10g salt 7g sachet of easy blend yeast tsp of ground cinammon 1 orange blitzed up in a blender 100g of raisins/apricots/candied peel (or a mixture of) soaked in 100g of boiling water for half an hour.
Mix everything together. Keep the wet mixture in the bowl and, with floured hands, give it a work out as best you can. Leave to rise for 1 hour.
Turn out and cut in half. Fold in half lengthwise and lay on a floured board to proof seam side down for circa 45-60 minutes.
Bake at 220ºC for 25 mins (or that's how it behaves in my wfo). Done when thermometer probe measures 98ºC.
You might expect big holes with such a wet dough but the fruit keeps the crumb in check.

Another brilliant recipe for me to try.....and I will. I seem to going backwards with my normal white loaves....I don't know why. But I am having great success with the loaves I make for the wife....wholemeal with seed and grains with black olives and diced cornichons......sounds bizarre but tastes good.
The 275gms of water sounds like a dry mix, but if you soak the fruit in 100g of boiling water then it makes sense. I love sultana's soaked in Calvados or Eau de vie but as both are difficult to get in the UK, I'll stick with your T&T recipe.
