Garlic soda bread. 450 grams of plain or wholemeal flour ( I used a mix of oak smoked,doves farm malt house and plain) 1 teaspoon salt 1 teaspoon bicarbonate of soda About 230 mls milk with 1/2 teaspoon lemon juice ( make this a few hours before brea d) 1 large very finely chopped clove of garlic ....... Or not if its a sweet bread. Mix and put it onto my stone in a preheated oven ( 220) Muffins .... Made these for the freezer but had to keep testing them the smell as they cook is amazing. 2 level teasp dried yeast 1/ 2 tbsp sugar 8 fl ozs of warm milk and leave to get a frothy head 10 ozs strong white flour 1/2 teaspoon salt Cornmeal or flour for dusting . I prefer cornmeal ( fine polenta) Mix everything together and knead for ten minutes. Leave to prove until doubled in size Knock back roll out to about 1/2 inch thick put on a cornmeal surface and leave to double in size. Place griddle or pan on heat source to heat up. Cook muffins about 7 to 10 minutes each side . Pull apart and toast. I made 17 but only 13 made it to the freezer!! Attachments:
