Well I had to do something with the butter milk I made a very moorish wholemeal and oatmeal soda bread. The butter. Was made using less than half price clotted cream ( love the specials aisle!! ) so it made sense to knock up a soda bread. A very useful loaf as there is no need to prove. Mind you I also knocked up a biga for a stuffed herb loaf for tomorrow. I did the loaf on the BBQ as I am going to be smoking some mussels and mackerel for soup tomorrow. Making butter is really easy, for those of you with kids it's great fun for them. and dead quick and easy if you use cream. I can't guarantee the waistlines though. Fresh butter on your bread is very moorish!! Attachments:

Everything you seem to do/create looks real good and very often it;s the same sort of thing that I would like to get round to...one day doing.
There's so many things that I haven't yet got round to trying....including soda bread and my own...home made butter. Your posts always nudge me in the right direction to attempting these delights.

p.s....I've always wanted to make a home made bacon butty...i.e...my own home cured bacon, self made bread and butter a la Rivergirl method.....I think if I ever get that far, a simple home made ketchup or brown sauce shouldn't pose too much of a problem.

I love making my own bacon ! But here in France I also love the poitrine ( bacon just like our butcher used to make!) there is a buzz from realising that everything you have put on the plate is homemade. I am going to open a bottle of elderberry ketchup tomorrow. It's been brewing for over a year or maybe 2 and it was a first attempt so hoping that its a good fruity,spicy peppery little number. Now you are talking though with brown sauce ............. For me though it has to be daddies!!

please can you share your recipe for Elderberry Ketchup?
I know that no matter how many Elderflowers I pick our trees will still be laden with elderberries in the autumn and I would love to do something with them.

LS. google pontack sauce. I am in England at the moment and my cookery books are in France ! This present batch is two years old and it definitely improves with age. So be prepared to wait for it to mellow for at least a year!! I also make jellies , jams, cordial and cough mixture with the berries.

Wow. Home made butter - I'd never thought of that. And buttermilk is difficult to get around here but I want some to make authentic southern fried chicken with one of these days.
I can feel an attempt at home made butter coming on this weekend...
Two birds with one stone....

:-) Couldn't resist, so i went out and bought some cheap double cream. 2.4L of cream seems to make rather a lot of butter......I ended up with 1.25Kgs of the stuff! It's in the fridge cooling off now.
It's also quite a messy process I discovered....

The butter is lovely! I used Sel de Guerande to salt it with and it came out a treat. Thanks for the inspiration. I might try some soda bread tomorrow as well with the buttermilk - although I do already have some sourdough loaves on the go....
