So here's my tribute to Marcus' constantly amazing looking BBQ recipes! lol. Essentially was looking to replicate the dirty steak cooking process but only having softwood at my disposal (no hardwood or charcoal at the min) I was worried that I wouldn't be able to produce enough heat once my fire had died down to coals, so ended up cooking over the fire using a grill suspended on the wood itself, lol. A well trimmed steak, salt, pepper, garlic & rosemary oil. Charred over the fire then into the oven to hit 45-50C internally, then basted with seasoned butter and rested to 55C internally. Served with baked potato, rocket salad with honey/mustard dressing and cream cheese & houmous. Cheers Marcus! JK

Wow, I love this, thank you so much for sharing, glad you gave it a go how did it taste? looks amazing the charring sets off the maillard process which gets all us carnivores dribbling... Cheers Marcus

Tasted great! The meat was very juicy. The only thing I'd say is that the 'crust' was a tad over seasoned which is probably due to me not realising how little seasoning you loose when cooking a steak this way and as such over-seasoning in the first place. It could've also done with a sauce, especially with the baked potato as a side, I was planning on a mushroom and pepper cream sauce but skipped it in the end which was a mistake.
But all in all very happy with the results!
