It depends A properly functioning chimney will create a suction effect that will remove the smoke and stop it coming out of the front of the oven, while increasing air flow in/out of the oven making the fire burn better. That said, many ovens have no chimney and work perfectly well M.

I have just installed a 1.2m Bernito in our Pizza Truck. The Bernito has a small 3.5in stainless chimney as standard, that does not do a great deal normally. We have extended it about 4ft and it now protrudes about 6in above the roof. 98% of smoke etc now goes up the flue and the fire draws slightly better. Thats my only experience of wfo and chimneys. Hope that helps !
