Tried something a little different yesterday, as there were only four of us for lunch, and made a pizza each rather than sharing them as they came. This gave me the opportunity to try my hand at my personal favourite, the Calzone. It's basically just a ham and mozzarella pizza folded in half, the trick is to wet the edges slightly before folding so they stick together and to add a little dollop of tomato on top to allow the centre to rise without burning. It takes slightly longer to cook and I think it benefited from being last as the floor was probably slightly cooler so the bottom was well done without being burnt. For the first time I even had the opportunity to photograph it before it got eaten! You can of course make any flavour you like (would work particularly well for sweet creations I think), but ham and mozzarella is traditional. Simple, but delicious.

That looks really good to me ! I use a modular oven, have the fire on the left side, so this gives me a temp difference of about 70 oC from side to side. When I do a Calzone it goes on the cooler side and takes a little bit longer, but as you said, don't want it burnt but needs to be cooked ! Bet it tasted fantastic !

And still I have not done pizzas in mine....... Every time I see one of your photos I get the urge to make one!!
