When in Tesco's today I thought I would just ask the bread counter if the bakers used fresh yeast and if so did they sell it .To my suprise the assistant asked how much I wanted,so I asked for 100grams and there was no charge .apparently it is a policy not to charge for small amounts but larger amounts say a kilo they will charge for . Don't know if this is a national policy but must be worth asking. I mean free fresh yeast ( It is a nice piece of yeast and should keep a month or so .)

I get mine from Tesco and parcel it up in small amounts and freeze it.

I've gotten some from Sainsbury and some from Nifeislife... I know there shouldn't be much of a difference, but I like the idea that everything bar the milk in my pizza is from Italy

Milk is British only because the milkman brings so much I can't bring myself to buy Italian milk AND throw out the British one (ordering less milk isn't an option ) Pizza dough needs a little milk to help the yeast along not much, but a bit is "di rigore"!

You have got me curious, why are you using milk in your pizza dough? What style of pizza are you making?

Try Raw Milk, its just like milk used to be! Before they mucked about with it for the supermarkets.
My local farm has a great trade selling straight from their milk storage vat. They've also set up a cheese making factory too.

I've been looking for raw milk since moving to the UK - but haven't been able to find anywhere near me... Back home they tried outlawing it under EU health & safety, only to face a massive backlash... If you know anywhere near West London/Uxbridge I would love to hear! I know of a few farms around Slough, but none of them seem to sell milk...
Recipe for dough I use is simple, I don't really measure anything: - half fill bread maker with caputo flour - add a teaspoon or so of salt - add a big splash of olive oil (from my uncle's farm, and his friends mill) - turn on the bread maker
Separately, - fill a glass 50/50 with warm water and cold milk - add a bit of fresh yeast, and mix well - let stand for 5 minutes, then add to the flour
It's a recipe my family uses when making "pizza alla teglia" (pizza in an oven-pan, much thicker than Neapolitan pizza and usually sold by the slice by bread bakers or made at home). It works quite well for thin pizza too, the advantage is the dough rises a bit more (but may be purely subjective).

There used to be a vending machine in Selfridges but i believe that got shut down on the same grounds! Its all nonsense, and the milk marketing board and supermarkets should be investigated for the tampering that they do to "normal milk".
Sounds a nice recipe for dough though!
