I smoked some cod yesterday on my gas BBQ with the help of some lovely wood chips . These are no ordinary wood chips . They are whiskey cask wood chips that I used to smoke some cod It wa slovely and I also did a you tube video and hope you enjoy it youtu.be/W0SM8To134s

Where did you get the wood chips from? They not bought or sold commercially spinal they are from one of the local distilleries in Ireland and I know the owners . Everytime they check the cask or take a test they bore a hole and these are from that . SO they are soaked by whiskey for many years . Not like the stuff you buy in packets from shops these actually smell very strong .

I used to hot and cold smoke on my gas BBQ but have NEVER been lucky enough to get well whiskied chips!

Spinal RG I would gladly send you some but it doesnt justify the cost of P&P from Ireland . As Irish people always say rip off ireland and they are not joking its €10 + for a envelope of the stuff and have sent some to a very fond friend of mine before in Darkest Devon LOL but cant afford to be constantly sending packages out at that cost sorry again

More than glad to pay for postage! That said, amazon seem to have some whisky-wood chips, so I reckon I'll give that a try... may pour over some cheap whisky first and soak them a bit... (heresy?)

I was just going to suggest soaking your own, but you beat me to it Rivergirl. Know that I wouldn't have a problem with that, I hate whisky! Suppose you would have to leave them soaking a good while and then allow for drying out.
Fish looks amazing.

Please keep me updated how you get on with these amazon chips SPINAL . Oh no dont pour the whiskey over them it wont be the same . A few drops of whiskey isnt the same as soaking for eg10 yrs . Have a look around where you live localy there is loads of artisan beer and craft whiskey distillaries poping up around all of a sudden its a big revival . These lads wil be more that willing to help you and give you some of the off cuts as they only waste it and would normally bin it if not taken by me or you .
When i do dampen my chips for soaking you must see how dark the water is from the wash of of whiskey thats soaked in the barrels. Lovely. I try not to wet it to much to fast otherwise the water just runs off and as mentioned all this whiskey thats been soaked in washes out so take your time and gently dampen the chips to take its time to get soaked and not let the wiskey flavour wash out !!!!!!!!!
Its only the Big american bourban brands that sell the chips and why buy them if you can get local . I always wonder why the bought packet stuff looks so nice and clean and lighter that my stuff. This makes me question how much of it do they wash out of the barrel wood before they package it . I read recently in a Trade whiskey magazine that whiskey /bourban distillers in USA are and have developed methods to wash the cask to extract some diluted whiskey to mix with the stronger one as demand for whiskey is at a all high world wide so they have to extraxt every bit to keep up with demand. Thats the lover alcohol whiskeys that have appered on the USA markets now by the big brand names Lukily the irish arent doing this nonsens yet and dont know about the Scots either but dont think its the type of stuff the Scotts would do either as they also know to pride themselves on their craft
