Hot smoked Salmon, burnished smoky outside moist and flaky inside, a real treat. I smoked this prime cut salmon fillet in a Peetz smoking cabinet from Scott at Garden Gift Shop also using their Smokai cold smoke generator and Irish whisky wood chips from my friend Quinzil at BBQ MasterClass The video below details how I hot smoked the salmon. I'd love to have a go at smoking, Marcus. I sea fish, so i hope to get amongst the Whiting soon and think that hot smoking would suit that fish well too. Do you set a fire, or chorcoal, and then simply throw wood chips onto the coals, and set your fish above it on a grill? Say in an old bread bin, or something?

Yes mate hot smoking can be as simple as that, as long as the coals aren't too hot, so just a small amount would be perfect. You can use an old bread bin or simply a BBQ with a lid and some wood chips. Look forward to a smoked whiting recipe soon Cheers Marcus
