Traditional tea cake in a traditional oven. Ingredients220g / 8 oz self raising flour 1 tsp mixed spice 85g / 3 oz butter or margarine 85g / 3 oz sugar 85g / 3oz dried fruit 1 egg Milk MethodAdd the spice to the flour and mix well. Rub in the butter with fingers to create breadcrumb consistency (or use a food processor). Mix in the sugar and dried fruit and bind together with the egg. Add enough milk to make a soft dough. Spoon large teaspoons-full onto a baking tray covered with baking paper (makes 12) and transfer to a cooling oven (about 180-200C so after bread in stored heat cooking). Bake for 15mins then remove and transfer to a wire rack to cool.

They look so tasty! She who must be obeyed is on a dairy free diet, do you think using a water instead of milk would work? We have Almond and soya "milk" in the fridge, but would worry that they might impart flavors that don't work in cooking.

I'm sure water would be fine, even soya milk would be OK I think as it is not strongly flavoured and nicely sweet. They taste best with butter in (doesn't everything?), but margarine will do if this is a problem too.
People have been bugging me for ages to include a section on my baking site for special dietary requirements, but I just don't know enough about them to feel I can do it justice.

Oh that takes me back to helping Mum bake on a Saturday afternoon when I was a child. Used to do the week's baking, rock cakes, fairy cakes, victoria sponges, apple tarts, eve's pudding and apple or rhubarb crumbles. We used to think it was a treat to get a cake from a shop!

Wifeys only gone and decided to go Gluten free! That poor excuse for flour is a nightmare to work with, but i just think that these little beauts will be fine! Thanks Barney!
