Goats cheese and Beetroot chutney, on a sourdough base.

Blooming delicious! The blobs of fuity chutney went really well with the earthy creamy goat cheese.
and...i will admit...it was bought from my local cooperative supermarket! In my own view, they do some of the best pizza of all the SM in my area.
However, i will be creating my own version of this when i get round to lifting the last of my own beets. I thought a dusting of cumin or cayenne pepper would lift this to a whole new level too!

I have a few I love beetroot and orange and a nice garlicky one as well. Beetroot and orange 2 lb grated or finely chopped cooked beetroot. 1lb chopped cooking apples 3 large finely chopped red onions 1 pint red wine or cider vinegar 1/2lb brown sugar 1 inch grated ginger
Juice and zest of 2 oranges 2 grated cloves garlic 1 teaspoon ground coriander Spare 1/2 ground cumin
Put everything into a pan except the beetroot,ginger and orange. And simmer for 1/2 an hour add the rest of the stuff and simmer for another 1/2 an hour . Bottle.
Garlicky beetroot 500 grams grated beetroot 450 grams chopped apples 3 finely chopped red onions 6 cloves grated garlic ( I taste at the end to see if it needs more) 1 to 2 inches grated ginger 115 grams brown sugar
185 red wine or cider vinegar 60 mls balsamic Teaspoon allspice 1/2 teaspoon coriander Cook all up for about an hour. Add salt to taste.

I've got a recipe for beetroot jelly somewhere. It's absolutely delicious and very moreish. Will post when I come across it.

Ps with the chutney you can either cook them up with raw chutney ( grated or cubed your choice) or use precooked !!
