Hello guys,
It’s my turn to host xmas dinner this year for a family of 8/9 (only due to the fact that we’ve got an 8 month old and I’m b*ggered if we’re carting him around on xmas day). So seeing as I’ve got my outdoor oven, I’ve decided to utilise it.
I’m not going to go crazy and cook a whole turkey in it as there is too much of a chance of cocking it right up and spoiling dinner – so I thought of doing the veg outdoors.
I’m going to start this weekend on seeing what the best technique is to getting the perfect veg and working out timings… I shall report back with my findings.
So from now until xmas, I’ll be eating a lot of roast veg…
Any tips welcome.

I was really thinking of doing this, surely it can't be that difficult, if the oven is warmed solely for this purpose the temp can be well regulated and turkey, trimmings and pudding can all be done on one firing. It's also a good time to start Christmas cakes about now...

I'm not saying that it can't be done - i'm just too much of a outdoor cooking novice to do it. It will be done in the future but as i only finished my oven in the summer this year i'm not totally familiar with it's temps/timings etc.
I for one would love to find out how you got on and how you did things...

I did Christmas dinner in my oven last year, and it turned out really well. Didn't do turkey, as friends who were coming wanted pork, so did a joint, little sausages and bacon wraps, roast potatoes, roast veggies, couple of stuffings, but cannot remember what vegetarian dish that I cooked for myself though. Indoors, I made soup, prawns for starters, bread sauce....whether it goes with pork or not, I don't care, I wanted it and always have it, also a pomegranate sauce to go with the pork. Think pudding was a trifle but can't remember.

How about this? Xmas eve...full on firing and pizza par-tay, with long high temp soaking of the oven, and then a pre-prepared, buttered, baconed and foiled Turkey goes in for overnight dropping temp residual heat cooking? I doubt that i'd sleep that night! I've only tried two things other than pizza...a burnt Boston Baked Beans and a majorly undercooked Beer Can Chook! A fifty quid free range Black gobbler is a bit of a gamble for me! But i'd love to see someone else post their results, as i reckon its a real possibilty and could produce fantastic results!!!

For the roast veg I use Carrots partly cooked in ginger,1/2 star anise, orange juice , a little sea salt and a big knob of butter. Sweet pots. Squash etc I just peel and chuck in the pan . Toss in some Cajun or spices . Pots , I part boil in their skins then peel add salt and dry mustard powder. Parsnips I part fry in butter and syrup or honey All the part cooking can be done the day before . Either put into tinfoil parcels or in a big tray. By putting different flavours into your veg you are increasing the different. tastes Cabbage shred put in tinfoil packet with a knob of butter and a little stock or water. Sprouts I also part cook off in butter add the chestnuts put. into tinfoil packet If doing duchesse pots do all the mash and piping the day before. I use the BBQ every Christmas even for my turkey. It leaves the oven free for extras and the yorks hires. Stuffing make the day before and shape . Wrap up the sausages in bacon whenever you want and freeze them in a tinfoil packet! Yes I go through loads of tinfoil but it cuts down on the dishes on the big day! I make my Yorkshire batter the day before and if there's no room put it in the garden in a Tupperware container. Most of all don't stress about it!! It's friends and family if something goes wrong it's part of the day! I even BBQ my Christmas pudding and bring it to the table flaming in the frying pan!

I have tried doing a turkey in my oven :-( Last year I bought a Heston Turkey crown from Waitrose brined it for 24hrs and then coked it in a sous vide machine. The best turkey I, my family and our friends have ever had :-).
