I came back from work totally famished as had to skip lunch, so wanted to whip something up quickly, fortunately I had some chorizo meatballs hiding in the fridge, so I warmed them through in a frying pan, until they were crisp on the outside. Not wishing to waste the deep russet coloured oil they had released into the pan, I slid in a couple of slices of sourdough for a minute each side. In the meantime, I whipped up a Monterey Jack cheese sauce, melting 4 tbps Monterey Jack cheese with 2 tbsps sour cream and stirring in half a sliced chopped green chilli, stirring to make an indulgent cheese sauce. I placed the chorizo balls on the bread before topping with the Jack sauce and a few more cheeky chilly slices, an easy snack to warm me through on a chilly autumnal evening. Cheers Marcus
