Had a look at the blog it's all looks wonderfull! How did you know when the oven was at 280? I've just made a door and want to do some roasting but need a feed tips!

I have a laser thermometer, i fired as normal then shifted the embers to one side to allow to cool keeping a small fire going for roasting

Was that floor temp or dome temp then you took a reading of? Did you put a door on whilst roasting? If so would this not put the fire out anyway?

Floor of the oven, what i do i put two small stones under the door to lift allowing air through keeping the small fire going.
