I love...plain and simple Sage and onion stuffing on my christmas plate.....BUT....wifey, hates sage. So tonight I am making stuffing balls which I will cook then refrigerate until needed on xmas day.....then warm through. I am a foodie by heart but no connoisseur so I have bought a simple pack of "Morrisons" sage and onion stuffing for myself and a Sainsbury's pack of "taste the difference" Roasted chestnut,toasted hazelnut & thyme stuffing. To enhance both stuffings I melted some goose fat and extra virgin olive oil together and added finely diced home cured streaky bacon along with finely diced red onion and 2 small cloves of garlic...very finely diced. To the packet mixes I added 1/3rd less than the boiled water recommend, then when cold I added sausage meat (taken from cheap and cheerful sausages) plus the pan mix. I added a handful of chopped walnuts to wifey's stuffing. Here's both ready for the oven...wifey's 10 balls are on top... Out of the oven..... Mine taste good......not so sure about hers...she says they are great....I'll take her word for it. Terry

We have minced pork, onions, garlic, almonds, apricots and some herbage. In balls and rolled in bacon. Also done a bacon weave loaf

I'm serving pork, sage and onion stuffing, and in the middle of making celery and mandarin stuffing at the moment. (Latter usually has walnuts in, but have someone allergic to nuts, so omitting this year). Can't do photos at the moment, sorry.
