I skewered my mushrooms onto kebab sticks and cold smoked whilst I was hot smoking a shoulder of pork this week. I wanted to experiment getting some flavour into veggie dishes for my friends .....................
1 large onion finely sliced 300g mushrooms ( I used chestnut because thats what I had but a mix would be better I guess) 3 cloves garlic crushed !/2 finely chopped red pepper 1/2 finely chopped different colour pepper 3 oz butter 400g grams rissotto or basmati rice 1.75 litres cider or white wine and veg stock salt and pepper
heat half the butter in the pan ( add a small touch of oil to stop it burning) saute the onions until soft add the garlic and the rice and slowly add the hot stock ( cook as if risotto) towards the end of cooking add chopped mushrooms and peppers. ( thats because I like mine crunchy but you could add them with the onions if you prefer.) Remove from heat leave to rest for about 1 min stir in rest of butter and grated cheese ( I used smoked cheddar) Sand P to taste.

Great recipe, could you taste the smokiness of the mushrooms? Bet terry would like the cider in it, if he didn't drink it first Cheers Marcus

yes you really could I thought that with the smoked cheese as well ( and the smoked garlic) that I would try it just with the smoked mushrooms next although the smoked cheddar is stunning I wanted a hint not a hit of smokiness !!!!

a wisp of woodsmoke is usually enough i find, and is easy to overdo it i have to peg myself back so i don't chuck loads of wood chips on cheers marcus
