Hi folks. I am from Texas now living in the Midlands. Came across this site while researching smoke controlled areas ( about to move house ). Now I don't have a wood fired oven nor am I about to build/buy one. No offence meant. I have an idea. I am a member of the U.K. Group of an American meat smoking forum. Both forums are pretty close in what they are trying to achieve. We can help you with curing your own hams, bacon and such. Pepperoni and salami recipes are also available on the website. I am not trying to promote someone else's website. I just think we could help each other. I get nothing for this. Making some of your own ingredients should be a money saver if you are doing this for profit. I don't know the rules here as I am new but I will post a link below. Links may not be permitted but I only offer to share knowledge and skills. Many of our Group doesn't have a wood fire oven but a couple do. We also have all the members from the States. Many folks with knowledge of brick builds and the knowledge of air flow to opening. Without correct air flow most of these things don't work. I am not trying to "poach" members. As stated above I think this is a GREAT opportunity to share knowledge. If anyone is interested the link to the U.K. Group is posted below. I have also included a build from one of the U.K members.
