Can anybody share a definitive long prove (48 hr+) sourdough dough recipe please? I've found a few but have got a little confused between the ingredient percentages...

Flour (Caputo Blue) : 1650 grs Water: 1000 grs Salt: 50 grs Active Starter (and I mean Active): 50 grs
