Hi, I've been dreaming of making my own BBQ for years and have recently started expanding it to a wood fired pizza oven. So I've started researching lately and have come across this site, so after spending most of the night reading through it I'm pretty happy that I have found a site that can help me build my master plan (although my wife isn't so happy) So obviously I will research the forum fully but a couple of quick questions! A clay oven or a brick Pompeii oven??? I'd like a wood burner for slow cooking ribs pulled pork etc, so are these two types of ovens vastly different to each other? Or are they interchangeable?

Hi Not had any experience with clay but If your wanting to slow cook then a brick oven will probably suit you better. Once you have saturated the bricks with heat a well insulated oven will still be hot the next morning. We recently cooked a six hour pulled pork shoulder in ours absolutely amazing.
