Hello, Does anyone have any experience with the LA Hacienda free standing pizza oven? It's the metal one with fire below the grate that the pizza stone sits on. I am told that you can BBQ, Smoke and cook pizzas. The problem that I have is maintaining the temperature. I can get the oven as hot as I like but then it starts to drop in temperature. It seems that I have to cook 1 pizza and then add wood to the fire again to bring it back to temperature, meaning quite a wait between pizzas. I would like to cook other food in the oven but have no idea for example how to keep the temperature low enough for long enough to cook say a chicken or slow cook lamb maybe. Any help would be greatly appreciated.
