Hi all,
I'm a keen cook and I run a business installing wood burning stoves and fireplaces so I love anything wood burning. I have a few wood fired ovens and a charcoal kamado grill.
i cook some mean pizza, spatchcock chicken, pies, ribs, pulled pork, brisket...... Anything!
Recently been considering setting up a mobile pizza business so thought I'd check out this forum for some info and tips.

I have a couple of Alfa pizza ovens. I've got the 4 Pizze and the 5 Minuti. I reckon I'd use the 5 Minuti. 2 people can lift it, it heats up in 15 mins and it uses little wood. It's spot on for churning one or two pizzas at a time.
I have a proper refractory wood fired oven at home but I actually prefer the Alfa for purely cooking pizza. My oven at home is better for roasts, low and slow and baking due to the sheer mass of it.
Thinking of just a gazebo, couple of work benches, cool box and pizza oven for initial setup. Go do a few farmers markets and get a feel for it. If it goes well then likely jack in my company and go full time. I'd then look at maybe a trailer or truck later on although I quite like the fact that you can get in anywhere with a gazebo.

I saw a guy once come to our town who had a pressed concrete slab on a steel framed trolley. He had a dome built on top of this slab and cooked the pizzas in this oven. It tasted pretty good too. All I could say really is he must have lost a lot of heat through the base.

I was on holiday down Somerset a couple of years ago, and a couple came on the site with a converted horse box trailer with a drop down side revealing a wood fired pizza oven, seemed to do a good trade every night they came on. also they tasted great.

I saw a guy once come to our town who had a pressed concrete slab on a steel framed trolley. He had a dome built on top of this slab and cooked the pizzas in this oven. It tasted pretty good too. All I could say really is he must have lost a lot of heat through the base. This just about describes my build (see below) the underside of which gets to about 80c during a pizza session, so while there is heat loss, it's not significant. So far the most I have managed is 70 pizzas in one session, just keep adding small quantities of fuel.
