I've seen someone use blue engineering bricks for the interior would these stand up to the heat or do I definitely need kiln bricks.

All clay bricks, including 'blue' ones can be used to build a WFO dome; the gold standard are firebricks, but bog standard reclaimed building bricks work just as well for a leisure oven. If you are contemplating a commercial oven for daily use then firebricks are worth the investment, if you are building something for infrequent, casual use then consider using common red bricks. The only caveat being that you shouldn't use ones with holes through them, reclaimed wire cut bricks are getting hard to find but a lot cheaper than firebricks.
