Having spent all summer building a scratch build wood fire oven we ate the first pizzas tonight and they were awesome. Learnt a load of lessons. Good news is the oven worked. Bad news is it was so hot we could barely get near it. 365 Celsius on the oven floor read by pyrometer bought in Aldis for £12 (door thermometer from Vitcas read 280 Celsius but got 350 when the fire was on full song). Now need to get proper tools like a long peel and a fire pusher and an ash brush.

G'day Natural bristle brushes tend to burn over time. Wire brushes drop bristle on the floor and not good if they get I your food. I use the metal peel raise it and slap the floor a few times. The dust it raises is taken up and away in the hot air like smoke. Plus it impresses the guests. You've got to have a bit of theatre when you cooking pizza. Enjoy Dave

Fire pusher = Roofing strap, a couple of quid from any builders merchants !
