What are the pros and cons of a vault construction V’s a dome?
The oven body will be enclosed so not fussed about appearance, but that also mean it will not be easily accessible for repairs so interested if there is a longevity difference.

Thanks Ian Many folks decide that they'll build a vault instead of a dome because they think it'll be easier. This is not so because of the vault's inherent instability, coupled with the more uneven heating and expansion, resulting in weakened bonds in the mortar joints. Generally the larger the radius of the vault, the greater the sideways thrust on the sidewalls. A vaulted oven requires either buttressing of the side walls and/or bracing of the end walls. This requires some extra tricky design and usually means using some steel. Neither of these are required for a dome because it's self supporting. Unfortunately steel and refractory are not a great mix because any heat will accelerate corrosion unless stainless is used. A vaulted oven is a better form for cooking bread because loaves suit the rectangular base better than a circle and the sides at the base are vertical so the loaves can be placed closer to the walls there. For pizza a dome is better because the hemisphere provides more even and efficient heat circulation when firing and the form reflects heat back down to the floor more efficiently, especially because it's usually closer to the pizza. Do plenty of research before you decide what to build.
